Banana Bomb Cheesecake Recipe

200g digestive biscuits.
50g unsalted butter.
400g mascapone cheese.
200ml double cream.
50g icing sugar.
150g Banana caramel sauce from Lidl

1 large banana.
1 large Banana.
100g caster sugar.
50g Banana caramel.
15ml Banana Bomb.
For the cheesecake base:
Crush the digestives using a food bag and a rolling pin
Gently melt the butter in a pan or bowl in microwave - just until melted not hot, and add to the biscuit crumb. Mix thoroughly.
Tip into the cake tin and press down firmly.
Put in the fridge to cool for at least 15 mins.
Whip the cream until it is still runny but a thicker consistency.
In another bowl, mix the mascapone and icing sugar together with a wooden spoon.
Add the Banana Bomb into the mascapone
Add the thickened cream to the mascapone mix and whisk everything together until the combined cream mixture thickens.
Fold in the banana caramel.
Once the base is chilled, slice the banana and layer over the top. It must be fully chilled else the cheesecake filling will melt when added.
Tip in the cheesecake mix.
Leave to set for at least 4 hours in the fridge.
